Resumo
O presente trabalho. Verifica o. decréscimo no teor residual de SO2, em camarão relacionado com o processo de congelamento e período de estocagem. Inicialmente, as caudas foram imersas em uma solução de NaHSO3 a 1,25 % á temperatura ambiente durante 1, 3 e 5 minutos para cada experimento, e em seguida congeladas pôr imersão em salmoura e estocadas em Sacos de polipropileno trancado a - 27 + 2oC durante 60 dias. Determinou-se o conteúdo de SO2 residual a cada 15 dias, sendo as amostras separadas em 2 lotes, um dos quais foi submetido a lavagem em água corrente. Conclui-se que: 1 - O processo de congelamento por imersão em salmoura e a estrutura trancada dos sacos de polipropileno usados na estocagem do produto congelado concorrem para a redução no teor residual de SO2. A operação de lavagem dos camarões contribuiu para as seguintes reduções: ( a ) após seis dias de estocagem do produto congelado o teor do SO2 residual sofreu uma redução para 2/5 do seu valor após 10 minutos de lavagem; ( b) para 1/4 após 15 minutos de lavagem e ( c ) no caso do produto com 15 dias de estocagem e submetido a uma lavagem por 5 minutos o teor residual de SO2 foi reduzido para menos da metade.
Abstract
This paper present results of yield based on the comparative study of differents fishing methods used to capture lobsters of commercial importance Panulirus argus (red lobster) and P. laevicauda (green lobster). The work was undertaken the period between May to December of 1993. Monthly landing of 19 sampling (seven from netting, nine from diving and three from trapping) were accompanied during this period. For the red lobster the results show an average gain of length of 272 mm, 216 mm and 191 mm, and weigth of I kg/100 meters. 4,5 kglhour and 0.193/kglday from method of netting, diving and trapping respectively. The green lobster, showed an average length of 204 mm, 191 mm and 160 mm corresponding to the method of netting, diving and trapping. lt was observed that a very little stones (0.901 kg/100 meters of net) were trapped during the netting. The landings were carefully followed and it was found the capture of red or green lobsters are below the minimum size reommended through the legislation (0.6%, 24.5% and 60.9% for reds and 4.3%, 16% and 73.6% for greens for netting, diving and trapping methods used respectively). In general, the results indicate that individual catch above 30 meters had a length superior permitted by legislation. This observation demonstrate that there exist a stratified spatial distribution of average length of individuals (male and female) in relation to depth.
